
Carrot Lentil Soup

Ingredients
- 2 C. of Fresh Carrots
- 1/2 Onion
- 1 Tomato
- 3 Cloves Garlic
- 1 C. Red Lentils
- Salt & Pepper
- 1 Tsp Paprika
- 1 Tsp Cinnamon
- 1 Tsp Garam Masala
- 1 Tbsp Malaysian ginger curry spice blend
- 2 C. of Water
Instructions
- Chop onion and garlic.
- Sautee in coconut oil until tender.
- Chop tomato and carrots.
- Add to boiling water along with salt, pepper, and rinsed red lentils.
- Boil until tender.
- Add spices.
- Put 3/4 of mixture through food processor. Back into pan.
- Simmer 15 minutes.
- Serve warm.
